Ingredients:
(Makes 16-24)
Smoked salmon – thinly sliced
½ fresh avocado – thinly sliced
½ fresh mango – thinly sliced
1 spring onion – finely chopped
6 big mint leaves – finely chopped
Pancakes:
1 cup self raising flour
1 cup buttermilk
1 egg
½ teaspoon salt
Method:
Pancakes:
Beat the egg and buttermilk together.
Place the flour into a medium sized bowl.
Add the egg/buttermilk mix to the flour.
Add the salt and mix through. (If the batter is too thick, add extra buttermilk).
Heat a small frying pan over low to medium heat.
Lightly spray with cooking oil.
Using a teaspoon, place small bite-sized portions of pancake mixture into the frying pan. (See image above)
Fry for 2-3 minutes, or until golden brown.
Flip and fry for a further 1-2 minutes.
Remove and place on paper towel.
Allow to cool.
Layer each paddle with a mini bite-sized pancake, followed by a slice of mango, avocado, and a small slice of smoked salmon.
Garnish with fresh spring onions and chopped mint leaves.
Serve immediately.
