Leftover Pulled Pork Stir-fry Rice

Ingredients: (Serves 4)

1 tablespoon grape seed oil – plus extra if required

1 medium purple or white onion – finely diced

1 medium thumb-sized piece of fresh ginger – grated

2 medium cloves garlic – trimmed & finely crushed
-
1 long red or green chili – finely diced
-
1-2 teaspoons sesame seed oil – toasted
-
1 cup frozen baby peas – slightly defrosted
-
1 cup frozen sweet corn – slightly defrosted
-
2 cups leftover pulled pork – see pulled pork recipe
-
3 cups rice – cooked
Sauce:
-
2 tablespoons oyster sauce (or sweet soy sauce)
-
1 tablespoon light soy sauce
-
1 teaspoon dark soy sauce
-
½ teaspoon freshly cracked pepper – to season
Method:
Lightly stir-fry the onion, ginger, garlic, and chili.
Stir frequently for 2 minutes, or until fragrant.
Fold the sesame seed oil through the mix.
Add the peas, corn, pulled pork, and rice.
Stir-fry for a further 3-5 minutes, or until the mix starts to crackle and pop.
Drizzle over all the sauce ingredients.
Fold through to fully coat and incorporate.
Stir-fry for a further 3 minutes.
Serve immediately.
