Leftover Pulled Pork Stir-fry Rice

Ingredients: (Serves 4)

  • 1 tablespoon grape seed oil – plus extra if required

  • 1 medium purple or white onion – finely diced

  • 1 medium thumb-sized piece of fresh ginger – grated

  • 2 medium cloves garlic – trimmed & finely crushed

  • 1 long red or green chili – finely diced

  • 1-2 teaspoons sesame seed oil – toasted

  • 1 cup frozen baby peas – slightly defrosted

  • 1 cup frozen sweet corn – slightly defrosted

  • 2 cups leftover pulled pork – see pulled pork recipe

  • 3 cups rice – cooked

 

Sauce:

  • 2 tablespoons oyster sauce (or sweet soy sauce)

  • 1 tablespoon light soy sauce

  • 1 teaspoon dark soy sauce

  • ½ teaspoon freshly cracked pepper – to season

 

Method:

Lightly stir-fry the onion, ginger, garlic, and chili.

Stir frequently for 2 minutes, or until fragrant.

 

Fold the sesame seed oil through the mix.

Add the peas, corn, pulled pork, and rice.

Stir-fry for a further 3-5 minutes, or until the mix starts to crackle and pop.

 

Drizzle over all the sauce ingredients.

Fold through to fully coat and incorporate.

Stir-fry for a further 3 minutes.

 

Serve immediately.
