Pork Loin and Soba Noodles

Ingredients:
(Serves 4)
1kg (2.2lb.) sliced pork tenderloin
1 tablespoon grape-seed oil
1 packet of soba noodles – cooked
1 bunch Bok Choy
1 cup sliced spring onions
½ cup sesame seeds
Lime wedges
Salt and pepper to taste
Salad Dressing:
1 tablespoon chicken stock powder
1 teaspoon onion powder
1 teaspoon crushed garlic
1½ teaspoons grated ginger
½ cup tamari soy sauce
2½ tablespoons rice vinegar
2 tablespoons Sake
1½ tablespoons mirin
2 tablespoons sesame seed oil
¼ teaspoon pepper
Method:
Salad Dressing:
In a small bowl, whisk all the salad dressing ingredients together.
Set aside.
Cook the soba noodles according to the instructions on the back of the packet.
Drain.
Drizzle the noodles with a small quantity of the salad dressing. (Just enough to coat the noodles).
Set aside.
Heat the grape-seed oil in a medium-sized frying pan or wok.
Stir-fry the pork loin for 1 minute.
Add the Bok Choy and half the spring onions.
Add salt and pepper to taste.
Drizzle the remaining salad dressing into the frying pan or wok.
Stir-fry for a further 1 minute.
Remove from the heat.
Add the noodles and stir through.
Serve hot with a slice of lime.
Garnish each serving with sesame seeds and freshly chopped spring onions.
