Dad's Office Biscuits

Ingredients:
(Makes 30)
150g (5.3oz) butter – softened
½ cup caster sugar
½ cup brown sugar
2 eggs
2½ cups plain flour
2 teaspoons baking powder
½ teaspoon salt
1 cup macadamia nuts – toasted and chopped
1 cup dried cranberries
Method:
Preheat the oven to 180°C (356°F).
Line two baking trays with baking paper.
Beat the butter, sugar, and caster sugar together until light in colour.
Beat in one egg at a time.
Sift in the flour, baking powder, and salt.
Add the macadamia nuts and dried cranberries.
Lightly fold until combined.
Roll the dough into tablespoon sized balls.
Flatten the balls into discs.
Bake for 15-25 minutes, or until golden brown.
Cool on a baking rack.
(Test one - then give the rest to Dad!)
