Mini Sushi Bites Recipe by Nadine Lloyd

Ingredients:

(Makes  10-15)

  • 2 cups cooked sushi rice – cooled

  • Yaki Nori sheet – squares

  • Smoked salmon – sliced

  • Soy sauce

  • Avocado – sliced

  • Spring onions – sliced

Method:

Prepare the sushi rice according to the instructions on the back of the packet.

Set aside and allow to cool.


Cut 1x1in (25x25mm ) square Yaki Nori sheets.

Place one sheet onto each serving paddle.

Roll a small quantity of rice and place it on each nori sheet.

Flatten slightly.


Tip:

Wet your hands before rolling the rice.


Using an eyedropper, drop 1–2 drops of soy sauce onto each rice disc.

Place a small slice of avocado on top.

Place a small slice of smoked salmon on top.


Garnish with spring onion.

Serve immediately.
