Gluten Free White Chocolate and Macadamia Nut Cookies

Ingredients:
(Makes 30)
2¼ cups gluten-free plain flour
½ teaspoon fine pink salt
¾ cup brown sugar
¾ cup caster sugar
1 teaspoon baking soda
3 eggs
1 teaspoons vanilla extract
150g (5.3oz) unsalted butter – melted
1 cup gluten free white chocolate chips
1 cup macadamia nuts – toasted & crushed
Method:
Preheat the oven to 150°C (302°F).
Line 3 large oven trays with baking paper.
Using a spoon, mix the flour, salt, brown sugar, caster sugar, and baking soda together in a large mixing bowl.
In a small jug, lightly beat the eggs and vanilla extract together.
Add to the melted butter and stir through.
Add the wet ingredients to the dry ingredients.
Mix until well combined.
Add the chocolate chips and macadamia nuts.
Mix well.
Place teaspoon full sized amounts of the cookie dough, (about 10cm (4in) apart), onto the baking tray.
Place a whole macadamia nut in the centre of each cookie.
Bake for 12 minutes, or until golden brown on the top.
Set aside on a wire racks to cool.
Enjoy with a cup of tea or coffee.
