Choc-Orange Cookie Recipe by Nadine Lloyd

Ingredients:

(Makes 20-30)

  • 4.4oz. (125g) butter – room temperature

  • 1 teaspoon orange oil flavoring

  • Zest from 1 orange

  • ½ cup caster sugar

  • ½ cup brown sugar

  • 1 egg – room temperature

  • 1¾ cup self-rising flour

  • 1 tablespoon cocoa powder

  • 1 tablespoon milk

  • 1 cup dark chocolate chips

Method:

Preheat the oven to 320°F (160°C)

Line 2 baking trays with baking paper.


In a medium-sized bowl, whisk the butter, orange oil, orange zest, caster sugar, and brown sugar until smooth and the sugar dissolves completely.

Add the egg and mix until creamy.


Sift the flour and cocoa powder into the butter mixture.

Add the milk.

Mix through until a dough forms.

Add the chocolate chips.

Work through until fully incorporated. 


Roll teaspoon-sized balls of dough, then place them onto the baking trays.

Gently flatten the tops with the back of the spoon.


Bake for 12 minutes, or until the cookies have slightly darkened on the edges.


Cool on a wire rack.

Serve with tea or coffee.
