Choc-Chip Cookies

Ingredients:
(Makes 15-20)
1 cup unsalted butter – melted
1½ cups lightly compacted brown sugar
1 cup caster sugar
1 teaspoon vanilla extract
2 eggs
2½ cups plain flour
1 teaspoon baking soda
1 teaspoon salt
1¼ cups dark chocolate chips
Method:
Preheat the oven to 356°F (180°C)
Line two baking trays with baking paper.
Set aside.
In a medium-sized bowl, beat the butter and sugars together until light.
Add the vanilla extract and salt.
Beat in one egg at a time, until smooth.
Sift in the flour and baking soda.
Fold until combined, and a smooth dough has formed.
Fold in the chocolate chips.
Using a teaspoon, roll small balls of dough and place them on the lined baking trays.
Flatten slightly to form the cookies.
Bake for 10-12 minutes, or until lightly golden brown.
Remove and cool on a wire rack.
Serve with tea or coffee.
